Emerald Coast Catering Station Menus

Our chefs grill, saute and serve up robust flavors! Stations are beautiful displays of menus you select with an ample amount of food for your guests. Choose two stations. This provides your guests with a choice of up to six different menu items. Should you wish to select only one station menu, we will double the amount of food in order to satiate your guests’ appetites. So go ahead and choose two stations offering more variety!

Your guests will enjoy all three menu items:

  • Chicken Breast in an Oriental Marinade with Peanut Dipping Sauce
  • Jumbo Shrimp & Mushrooms with a Lemon-Dill Vinaigrette
  • Marinated Pork Tenderloin with Onions & Peppers

Grilling on "Island Time"

Your guests will enjoy all three menu items:

  • Jamaican Jerk Pork with Onions & Peppers
  • Tamarind Chicken & Pineapple
  • Rum & Pepper Marinated Shrimp

Grits in a martini glass!
Creamy Southern-style grits made with butter & heavy cream.
(If you are not Southern, you may substitute mashed potatoes.)

Choose three of the following toppings:

  • Warm Gazpacho & Crabmeat
  • Andouille Sausage & Roasted Red Bell Peppers
  • Creole Crawfish Tails
  • Assorted Mushrooms in a Madeira Sauce
  • Grilled Vegetable Ragout

The last two toppings are perfect for your vegetarian guests!

"Floribbean" Grits Station

Grits in a martini glass!
Creamy Southern-style grits made with butter & heavy cream.
Served in martini glasses with the following three toppings:

  • West Indies-Style Roasted Vegetables
  • Crabmeat with Mango
  • Beef Sancocho, a braised beef in coconut milk & island spices

All Aboard the Pasta Express!

Penne pasta sauteed to order with all three of the toppings below:

  • Seafood Marinara: a blend of shrimp, scallops & clams in the Chef's Secret Herb Sauce.
  • Cajun Fun: chicken & andouille sausage with Cajun seasonings sealed in a medium roux.
  • Mediterranean Blend: a blend of tomatoes, Calamata olives, onions, garlic, artichoke hearts, mushrooms & fresh basil. A dish your vegetarian guests will love!

"Celebrate the Sea" Station

All three of these delicious seafood delicacies will be offered to your guests:

  • Ponzu-Marinated Tuna: grilled & served on Asian Slaw
  • Floribbean-Style Grouper Tacos: topped with an aromatic assortment of goodies, such as mangoes, green onions & cilantro
  • Grilled Mahi Satays: marinated in rum & coconut milk

Gulf Coast Breeze Station

While on the Gulf Coast, your guests will enjoy:

  • Grilled Mahi Sliders with caper tartar sauce
  • Cashew Nut-Crusted Grouper with a tropical fruit beurre blanc sauce
  • Jamaican "Jerk" Shrimp Skewers

Havana Station

 Caribbean-influenced offerings include:

  • Classic Picadillo: a savory ground beef
  • Moros y Cristianos: rice with black beans
  • Puerco Asado Guajiro: peasant-style roast pork

Served with Fried Plantains.
Your guests can spice it up with hot salsa, or enjoy the mild spicy preparation as is!

Southwestern-Style Station

Your favorite Tex-Mex dishes prepared with medium heat:

  • Red Chile-Seared Shrimp with Smoked Tomato Grits
  • Grilled Chicken Breast served in Mojo Sauce with Mexican-Style Ratatouille (Mojo is a garlic-citrus marinade!)
  • Black Bean, Goat Cheese & Guacamole Quesadillas

Fajita Station

  • Marinated Flank Steak & Marinated Chicken, Grilled with Peppers & Onions
  • Served with Soft Tortillas, Lime Crema & Guacamole.
  • Accompanied with Tri-color Tortilla Chips & Salsa. Ole!

Space is tight at many venues, we can utilize kitchen counters for stations.

Sumptuous Salad Station

"Leaf" it to your guests to create their own salad!
Choose three of the following options:

*Spinach Salad: Grilled Chicken Strips & Mandarin oranges, almonds served with red wine vinegar & bacon dressing
*Tri-Color Pasta: Boiled Shrimp, Oriental Vegetables served with Sesame Ginger Vinaigrette

This is a self-serve station and presented as a beautiful bounty of selections! Please note, this is a self-serve station

The following stations are considered Add-Ons and not one of your two stations for the Station Style Food Service:

Fresh Spring Mix Salad Station Mixed Greens with Carrots, Tomatoes and Choice of Two Salad Dressings. Served with Yeast Rolls A nice complement to any meal.
Classic Caesar Salad Station Romaine lettuce tossed with a Creamy Dressing made of Anchovy, Garlic and Extra Virgin Olive Oil and Parmesan Cheese & Croutons
Greek Salad Station Red Onions, Kalamata Olives, Pepperoni & Feta with a Lemon Vinaigrette
Caprese Salad Station Cherry Tomatoes, Mozzarella Balls & Fresh Basil with a& Balsamic Vinaigrette
Southwestern Salad Station Tomato, Corn, Black Beans, Red Onions, Red Bell Peppers & Cilantro with a Cumin Vinaigrette

After a long evening of partying we open up this station.
Your guests will gobble up your choice of two of the following selections:

Dessert Station Anyone? A Chocolate Fountain Station!

Vesuvius...chocolate goody skewers...mmmmm!

Our chocolate dessert fountain flows with over ten pounds of chocolate.

Surrounded by bowls full of goodies, such as: strawberries, pineapple, marshmallows,
pound cake, marshmallows, your favorite candy bars & cookies, etc. the station creates a
sumptuous 'over the top' dessert experience.

Your guests skewer up their own concoction and do the dipping! "Vesuvius" keeps the guests "flowing"!!!
